Cuisine: Delish KFC inspired biscuits

Are you a fan of biscuits? I know I am! I surely don't care to purchase them whenever I need a biscuit fix for breakfast or dinner, so I decided to make a slight spin off from a  biscuit recipe I came across. The parsley and cheese measurements don't have to be precise and can be omitted all together without altering the rest of the recipe. The vegetable shortening can also be oil or butter (I haven't tried using butter personally). Either way, I couldn't have just one *licks lips*. Hope you enjoy ;D







FOOD: Granola Yogurt

As far as breakfast foods go I can't really say that I'm very innovative. This isn't very great seeing as some staple breakfast foods don't appeal to me very much (cereal, oatmeal, cream of wheat, boiled eggs/sunny side up gaggggg gaaggg gagggg and triple gagg lol).


In my quest for nice breakfast treats I have discovered......YOGURT lol. I can't say that I was previously a fan..Though I didn't find yogurt gagg worthy I sure wasn't going out of my way to eat it. I was having a discussion with my friend about her son. She mentioned that he didn't like to eat certain fruits and that he likes yogurt..We started thinking and I was like "Ahaa!!" lol Came up with the idea to add fresh or dried fruit to his yogurt with granola and maybe add sprinkles on top (yes..tis trickery) *giggles*

I decided to try out the idea for myself due to my lack of breakfast ideas..This is what I came up with!


All I used was vanilla flavored yogurt (Dannon Light), a crushed crunchy granola bar (nature valley), and added a cereal mix (Granola cranberry Orange) I purchased from New Leaf Market. (I put fresh strawberry in my mom's)

FOOD: Ricotta Turkey Meatballs

So...! I decided to make spaghetti and meatballs previously. I came across a youtube vid featuring Ricotta meatballs. Hmmm I thought to myself..I bet that's yummy..Might as well try it! For the Ricotta cheese meatballs I used..

  • Ricotta Cheese
  • Ground turkey meat

  • Seasonings: Seasoned meat tenderizer, Parsley flakes, and Chili powder
  •  Tomato sauce
 I wasn't too picky about brands, I figure it'll end up about the same anyway.
First I emptied the ground turkey into a container. I then added half a container of Ricotta cheese or enough so that the ratio of cheese to the meat was about 1:3 or 2:4. I added my seasonings/herbs and got ready to mix!

 I was sure to combine everything into the mix though not over mixing. It's not exactly supposed to look like a big glob of brown..lol
I got my lightly oiled pan ready (a skillet will work well) and set the heat to around medium. I shaped the meatballs and let them cook until full browned.

 After the meatballs were fully cooked I drained off the excess oil and added my tomato sauce and 1/2-1 cup of water (depending on how much sauce you use) to let the flavors get acquainted with one another. I let that simmer anywhere from 10-30min covered...and That's is!







FOOD: Shrimp & Grits

I went to a ballet recital last night and after the show they had refreshments.. Among the food were shrimp and grits in champagne cups. Of course I couldn't resist..It was pretty yummy and inspired me to try my own take this morning!

Ingredients:
Grits 1/4 cup
Water: 1 cup
Shrimp
Seasoning
Mozarella cheese
Sandwhich cheese
Garlic
Scallions


I started off by making my grits first. Bring 1 cup of water with a dash of salt to a boil (on medium heat) and added 1/4 cup of grits. I whisked continuously and turned the heat to low after around 2 minutes. Stir occasionally throughout cooking so that grits wont clump or stick to the bottom of the pot. After about 20 minutes I added a little bit of butter (maybe 1small teaspoon). I then added a sprinkle of shredded mozzarella cheese and half a slice of sandwich cheese. I mixed until the cheeses were nicely melted and turned the heat down as low as possible.


I set that aside and added a little bit of water if I felt it was thickening too much. At this point I was ready to start on my shrimp topping. My shrimp were already peeled, deveined (??) and seasoned. I seasoned to taste with around equal amounts of these seasonings. Be a little light with the Lemon and pepper seasoning salt since salt is the first ingredient..don't want it to be too salty. The chili powder also has salt as an ingredient.
I chopped up a little bit of garlic and scallions and added to a buttered pan to saute. I then added my shrimp mix. Cook on a little lower than medium heat until the shrimp are pink. I then added around 1/8 cup of water. I also added a sprinkle of mozzarella cheese. This is what it's looking like so far.


Now..I added two big spoons of my grits....yes..my grits lol..I didn't want to fully mix the shrimp with the grits because everything would be yellow. This is what it looks like..
Now it's about time to serve..I put the remaining grits on a plate and added my grits/shrimp sauce mix over the top..and THAT's IT.

FOOD: Sushi/Kimbap!

Today I was feeling kinda bleh. I was NOT in the mood to eatcereal...yeah I'm not a big fan. Since I'd already soaked some sushi rice I decided to have sushi for brunch .

  • Nori
  • Shrimp
  • Sushi rice 1/2 cup
  • Water 3/4 cup
  • Salt
  • Sugar
  • Rice Vinegar
  • Cucumber
  • Seasonings of choice (for shrimp)
  • Flour (for shrimp)
What I did was put the rice in a bowl and fill with water. Any debris will float to the top after sitting for a little while. Then you wash your sushi rice several times until the water looks somewhat clear. Let the rice soak for around 15 min or so then let it dry. I used 1/2 a cup of rice so I used 3/4 cup water to boil. Whatever amount you add 1/4 a cup of extra water in addition to the amount of rice (hope that makes sense). So for 1 cup of rice your water measurement should be 1 1/4 a cup of water...or something like that.. ANYWAY! 

Put your water into a pot, add a dash of salt, and turn up relatively high (a notch or two over medium). Once you see tiny bubbles trying to form add your rice. The water will come to a full boil pretty quickly. Let the rice boil for 1-2 min (stir a little if needed) then turn your heat down low low low. As low as you can without turning it off. Let the rice continue to cook on low for 15-20 extra min. Don't uncover!..Nope..No peeking!

As for the seasoning on the rice..take rice vinegar, a dash of salt and a dash of sugar and mix on the stove until the sugar is dissolved. (Do not boil) Move your rice from the pot and put either on a plate or wooden bowl. Sprinkle your vinegar mix over your rice with a spoon.


Cut up whatever you decide to put into your sushi rolls. I used cucumber and shrimp. I used a mix of seasonings for my shrimp but some common ingredients were salt, a little cumin, garlic (powder), onion (powder), chilli powder, red pepper and so on. I added some flour, mixed and fried lightly.

Spread your rice on your nori sheet leaving about 3/4 an inch uncovered (on the side farthest from you). Line your ingredients up on the side closest to you and begin to tuck and roll the sheet over itself. Finish rollin' that sucka and slice it! lol I like to use serrated knives for cutting or something nicely sharpened and it's also good to wet the knife every so often because when cutting the rice will make the knife sticky.

FOOD: Tilapia Over Basmatti Rice

So....if you know me, then you know I love food..lol This consists of, basmatti rice, tilapia, broccoli, garlic, and mushrooms. It's seasoned with basic seasonings (salt and pepper)..nothing complex. Though now that I see the picture I do wish I would have made a creamy sauce to go over the top..*mouth waters*
